Crispy Potato Taco Recipe – Receta de taquitos dorados de papa

 

This recipe is the perfect combination of Latin American foods: potatoes, corn (tortilla), chili and tomato (salsa).

 

I feed children all day, everyday, all year long. When I am uncertain about what meal to make next I boil potatoes. It is easy and inspires me to make something yummy. This is one of my go to, last-minute, favorite recipes and requires a few simple ingredients. Vegetarians love these. Pour on some red salsa to make them perfect. 

Yo alimento a los niños todo el día, todos los días, todo el año. Cuando no estoy segura de qué comida hacer luego, hiervo las papas. Es fácil y me inspira hacer algo delicioso. Esta es una de mis recetas favoritas de último momento y require algunos ingredientes simples. Los vegetarianos aman estos. Vierta un poco de salsa roja para que sean perfectos.

Crispy Potato Tacos - Taquitos dorados de papa

I love these! Vegetarian, delicious and simple, crispy potato tacos are one of my favorite last-minute recipes. So simple you just need potatoes and tortillas with basic pantry staples. Pour on some red salsa for the perfect flavor.

Ingredients

The Potato Filling

  • water - agua
  • 6 medium potatoes - papas medianas
  • cooking oil - aceite vegetal
  • 1-2 jalapeño or serrano chili peppers optional
  • salt and pepper to taste - sal y pimienta al gusto

The Potato Taco - El taquito dorado de papa

  • 1 dozen corn tortillas - 1 docena tortillas de maíz
  • cooking oil - aceite vegetal

Instructions

The Potato Filling - El relleno de papa

  • Place potatoes in medium saucepan and cover with water. Cook over medium heat for about 15-20 minutes until tender. Drain water and peel potatoes when able to handle.
    Coloque las papas en una cacerola mediana y cubra con agua. Cocine a fuego medio durante unos 15-20 minutos hasta que estén tiernos. Escurra el agua y pele las papas cuando pueda manipularlas.
  • Heat oil in sauté pan over medium heat. Slice chilis and fry for 2 minutes (optional). 
    Caliente el aceite en una sartén a fuego medio. Cortar los chilis y freír durante 2 minutos. 
  • Then add potatoes to hot oil and mash.
    Luego agregue las papas al aceite caliente y se aplasta.
  • Mash the potato filling until smooth. Add salt and pepper to taste.
    Se aplasta el relleno de la papa hasta que quede suave. Añadir sal y pimienta al gusto.

Crispy Potato Taco - El taquito dorado de papa

  • Heat oil in sauté pan over medium flame. Place a scoop of potato into a heated corn tortilla and fold in half. Fry potato taco for 2 minutes each side until crispy. Serve with red salsa.
    Caliente el aceite en una sartén a fuego medio. Coloque una cucharada de papa en una tortilla de maíz caliente y dóblela por la mitad. Freír el taco de papa durante 2 minutos por lado hasta que quede crujiente. Se sirve con salsa roja.
